This corn bread, which I make often, is moist with a hint of sweetness.   I like to serve it with spaghetti, BBQ or fish, but it is definitely good anytime.  If the corn bread starts to burn around the edges while baking just lay a piece of tin foil across the top. <\/p>\n<p><a href=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/04\/100_16411.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/04\/100_16411-300x225.jpg\" alt=\"\" title=\"food\" width=\"300\" height=\"225\" class=\"aligncenter size-medium wp-image-166\" srcset=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/04\/100_16411-300x225.jpg 300w, https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/04\/100_16411-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1 1\/4 C cornmeal<br \/>\n1 C all-purpose flour<br \/>\n2\/3 C packed brown sugar<br \/>\n1\/3 C sugar<br \/>\n1 tsp. baking soda<br \/>\n1\/2 tsp. salt<br \/>\n1 egg<br \/>\n1 C buttermilk<br \/>\n3\/4 C. vegetable oil<\/p>\n<p style=\"text-indent:.25in;\">In a mixing bowl, combine cornmeal, flour, sugars, baking soda, and salt.  In another bowl, whisk the egg, buttermilk and oil; stir into dry ingredients just until moistened.  Pour into a greased 9 inch round or square baking pan (pan will be full).  Bake at 425 for 20-25 minutes or until a toothpick inserted near the center comes out clean.  Cool on a wire rack for 5 minutes.
