For some school is already back in session.  Both of these are great reasons for a quick and easy meal that will fit into anyone&#8217;s weekday schedule.  Mahi seasoned with cumin and chili powder, grilled, and served with a delicious corn salsa that is fresh and bursting with flavor.  If you don&#8217;t have fresh corn, I have used frozen and it works great also.  Enjoy! <\/p>\n<p><a href=\"https:\/\/stirmypot.com\/wordpress\/?attachment_id=2215\" rel=\"attachment wp-att-2215\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2016\/08\/100_54741-300x225.jpg\" alt=\"Grilled Mahi with Avocado and Corn Salsa\" width=\"300\" height=\"225\" class=\"aligncenter size-medium wp-image-2215\" srcset=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2016\/08\/100_54741-300x225.jpg 300w, https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2016\/08\/100_54741-768x576.jpg 768w, https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2016\/08\/100_54741-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n4 Mahi Mahi Fillets<br \/>\n2 Tbsp. olive oil<br \/>\n2 tsp. ground cumin<br \/>\n2 tsp. chili powder<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. pepper<\/p>\n<p>For Salsa:<br \/>\n2 fresh ears of corn, shucked and removed from the cob<br \/>\n1 Poblano pepper, seeded and chopped<br \/>\n1 firm, rip avocado, cubed<br \/>\n1\/3 C. chopped purple onion<br \/>\n1 Tbsp. sugar<br \/>\n1 Tbsp. vinegar<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. pepper<\/p>\n<p style=\"text-indent:.25in;\">For the Salsa:  Combine all ingredients in a large bowl.  Chill while fish is grilling.<\/p>\n<p style=\"text-indent:.25in;\">For Mahi:  Heat grill to medium high.  In a small dish, combine olive oil, cumin, chili powder, salt and pepper.  Brush on to uncooked Mahi fillets.<\/p>\n<p style=\"text-indent:.25in;\">Grill about 4 minutes on each side (depending on thickness of the fillet), until cooked through and fish flakes easily.
