Topping this crust with a creamy cheesecake filling that has a hint of brandy (if using) and topped with blueberries, and wow, you can&#8217;t eat just one!  The hardest part is waiting for them to chill.  Enjoy! <\/p>\n<p><a href=\"https:\/\/stirmypot.com\/wordpress\/?attachment_id=3158\" rel=\"attachment wp-att-3158\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2021\/03\/20210307_0950381-e1616451281886-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" class=\"aligncenter size-medium wp-image-3158\" srcset=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2021\/03\/20210307_0950381-e1616451281886-225x300.jpg 225w, https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2021\/03\/20210307_0950381-e1616451281886-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a>                                                                                                                      1\/2 C. butter<br \/>\n3\/4 C. finely crushed graham crackers<br \/>\n1\/2 C. all-purpose flour (I used Einkorn)<br \/>\n1\/2 C. flaked coconut<br \/>\n1\/2 C. ground pecans<br \/>\n1\/4 C. sugar<br \/>\n12 oz. cream cheese, softened<br \/>\n2\/3 C. sugar<br \/>\n4 eggs<br \/>\n1 Tbsp. brandy or milk<br \/>\n1 tsp. vanilla<br \/>\n2 C. blueberries<\/p>\n<p style=\"text-indent:.25in;\">Preheat oven to 350 degrees.  Lightly grease 13&#215;9 baking pan; set aside.<\/p>\n<p style=\"text-indent:.25in;\">For crust, in a small saucepan heat butter over medium heat until the color of light brown sugar.  Remove from the heat; set aside. In medium bowl stir together graham crackers, flour, coconut, pecans, and 1\/4 cup sugar.  Stir in butter until combined.  Evenly press on bottom of prepared pan.  Bake 8 1o 10 minutes or until lightly browned.<\/p>\n<p style=\"text-indent:.25in;\">Meanwhile, in large mixing bowl beat cream cheese and 2\/3 cup sugar on medium until combined.  Add eggs, brady, and vanilla.  Beat until combined.  Pour over hot crust.  Sprinkle blueberries.<\/p>\n<p style=\"text-indent:.25in;\">Bake 18 to 20 minutes or until center appears set.  Cool in pan on rack.  Cover and refrigerate.  Cut into bars.
