I like to serve this with either rice or egg noodles so I double the sauce. White wine or chicken stock both work great, depending on the taste your family likes.  Half wine and half stock is delicious too. Enjoy!<\/p>\n<p><a href=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/11\/100_21501.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/11\/100_21501-300x225.jpg\" alt=\"\" title=\"food\" width=\"300\" height=\"225\" class=\"aligncenter size-medium wp-image-358\" srcset=\"https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/11\/100_21501-300x225.jpg 300w, https:\/\/stirmypot.com\/wordpress\/wp-content\/uploads\/2012\/11\/100_21501-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>8 boneless skinless<br \/>\n  chicken breast<br \/>\n2 Tbsp. olive oil<br \/>\n2 C. sliced fresh mushrooms<br \/>\n2 green onions, chopped<br \/>\n1 C. white wine or chicken stock<br \/>\n3 Tbsp. butter<br \/>\n1\/2 tsp. salt<br \/>\n1\/4 tsp. pepper<br \/>\n1 Tbsp. cornstarch<br \/>\n2 Tbsp. cold water<\/p>\n<p>In a large skillet, brown chicken in oil.  Cover and cook until juices run clear, about 20 minutes.  Remove chicken; keep warm.  In the same skillet, saute mushrooms and onions until tender.  Stir in wine or stock, butter, salt and pepper.<br \/>\nIn a small bowl, combine cornstarch and water until smooth; add to skillet.  Bring to a boil; cook and stir for 2 minutes or until thickened.  Add more wine or stock if sauce thickens too much.
