A garnish of salsa is also delicious. (10 oz) shredded pepper Jack or<br \/>\n  Monterey Jack cheese, divided<\/p>\n<p style=\"text-indent:.25in;\">In a large bowl, combine the potatoes and onion.  Combine the butter and seasonings; drizzle over the potato mixture and toss to coat.  Place half in a greased 13&#215;9 baking dish.  Sprinkle with half of the cheese; top with remaining potato mixture.<\/p>\n<p style=\"text-indent:.25in;\">Cover and bake at 400 for 45-50 minutes or until potatoes are tender.  Uncover; sprinkle with remaining cheese.
