Pepper Jack Potatoes

These potatoes can be mild or spicy, whichever way you prefer, depending on the cheese you choose to use. This is also a recipe easy to cut in half for just a couple of people. Pepper Jack Potatoes will satisfy when you are looking for that oooey gooey, potato, cheese side dish. A garnish of salsa is also delicious. Enjoy!

Pepper Jack Potatoes

6 med. potatoes, peeled and
cut into 1/4 in. slices
1 med. onion, sliced
1/2 C. butter, melted
1/2 tsp. salt
1/4 tsp. chili powder
1/8 tsp. cayenne pepper
1/8 tsp. pepper
2 1/2 C. (10 oz) shredded pepper Jack or
Monterey Jack cheese, divided

In a large bowl, combine the potatoes and onion. Combine the butter and seasonings; drizzle over the potato mixture and toss to coat. Place half in a greased 13×9 baking dish. Sprinkle with half of the cheese; top with remaining potato mixture.

Cover and bake at 400 for 45-50 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.
