Caramelized Vidalia Onion and Blue Cheese Dip

This dip is definitely for the blue cheese lover, but I also love the caramelized onions mixed in. The suggestion was to dip whole wheat pita chips which would be okay, but I had pumpernickel bread and an apple and they were quite delicious! Remember this would be great hot or cold; perfect party food. Enjoy!

2 Tbsp. canola oil
2 Tbsp. butter
2 cloves minced garlic
2 large Vidalia onions or other sweet onion, halved and thinly sliced
4 oz. blue cheese, softened
2 (8 oz) pkg cream cheese, softened
1/2 C mayonnaise
1/2 C sour cream
Salt and pepper to taste
1/3 C bread crumbs
Pita chips, pumpernickel bread, apples or other dippers

Preheat oven to 350. Spray an 8×8 baking dish with cooking spray. In a pan melt the butter and oil; add the garlic and onions. Cook, stirring occasionally, until onions are caramel colored, about 20 minutes. In the work bowl of a food processor, pulse together blue cheese, cream cheese, mayonnaise, and sour cream. Remove blade from bowl, and stir in caramelized onions. Season with salt and pepper to taste. Pour mixture into prepared baking dish. Sprinkle with bread crumbs. Bake until golden and bubbly, about, 20 minutes. Serve hot or at room temperature with dippers.
